Corn Salad

This corn salad is bright, fresh, and flavorful, which makes it a great addition to many different meals. It’s the perfect side dish or topping for your favorite tamales!

Ingredients:

 5-6 ears fresh yellow corn

 1 tomato

 2 bell peppers (any colors will work)

 ½ red onion

 1 tbsp lime juice (fresh) 

 ¼ tbsp paprika or chili powder 

 Pinch of salt

 1 tbsp olive oil 

 Finely chopped cilantro (garnish or included) (optional)

Instructions:

  1. Remove kernels off ears of corn using a knife, place the kernels in a large bowl
  2. Dice tomato, bell peppers, and onion, add them to the bowl
  3. Combine the veggies together
  4. Add oil and seasoning to the bowl, then stir until all veggies are evenly coated
  5. Top the corn salad with fresh cilantro (optional)
  6. Serve as is for a delicious side to accompany any meal!
